The Joy of Cooking (Even When You're Terrible at It)

If you're anything like me, you love the idea of cooking, but the execution can be a bit of a challenge. But don't let that stop you from enjoying the process and the delicious results! In this blog post, I'll share my love of cooking, even as a terrible cook, and give you some tips and tricks for making cooking more enjoyable for beginners. And of course, I'll share some of my favorite recipes that even the most novice of cooks can handle.


First things first, let's talk about the joy of cooking. Cooking is a wonderful way to express your creativity, experiment with flavors and ingredients, and nourish your body and soul. Even if you're not a natural in the kitchen, there's still plenty of fun to be had. And let's be honest, there's nothing quite like the sense of accomplishment that comes with creating a delicious meal from scratch.


Now, let's get to the good stuff - the recipes! These are some of my go-to meals that are simple, tasty, and perfect for beginners:

Spaghetti and Meatballs

This classic dish is always a crowd-pleaser, and it's easy to make too. Simply cook some spaghetti according to the package instructions, and while that's cooking, mix together ground beef, breadcrumbs, an egg, some chopped onion and garlic, salt, and pepper. Form the mixture into balls and bake in the oven until they're cooked through. Serve with your favorite marinara sauce and enjoy!


Ingredients:

  • 8 oz spaghetti

  • 1 pound ground beef

  • 1/2 cup breadcrumbs

  • 1 egg

  • 1/4 cup finely chopped onion

  • 2 garlic cloves, minced

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 cups marinara sauce

  • grated Parmesan cheese, for serving

Instructions:

  1. Preheat the oven to 375°F.

  2. Cook the spaghetti according to the package instructions, then drain and set aside.

  3. In a bowl, combine the ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix until well combined.

  4. Form the mixture into 12 meatballs, each about 2 inches in diameter.

  5. Place the meatballs on a baking sheet and bake for 18-20 minutes, or until cooked through.

  6. In a saucepan, heat the marinara sauce over medium heat until hot.

  7. To serve, place a serving of spaghetti on a plate, top with a few meatballs and some marinara sauce, and sprinkle with grated Parmesan cheese.

Veggie Stir-Fry

For a quick and healthy meal, a veggie stir-fry is the way to go. Simply chop up some of your favorite veggies, like bell peppers, broccoli, and carrots, and sauté them in a pan with some oil and garlic. Add in some soy sauce and honey for a sweet and salty flavor and serve over rice.


Ingredients:

  • 1 tablespoon vegetable oil

  • 2 garlic cloves, minced

  • 2 cups mixed vegetables (such as bell peppers, broccoli, carrots)

  • 1 tablespoon soy sauce

  • 1 tablespoon honey

  • Cooked rice, for serving

Instructions:

  1. Heat the oil in a large skillet over medium-high heat. Add the garlic and sauté for 30 seconds, or until fragrant.

  2. Add the vegetables to the skillet and sauté for 5-7 minutes, or until they are tender-crisp.

  3. In a small bowl, whisk together the soy sauce and honey. Pour the mixture over the vegetables and stir to coat.

  4. Serve the stir-fry over cooked rice.

Baked Chicken Thighs

Chicken thighs are a great protein option that's easy to prepare. Simply season them with salt, pepper, and any other herbs or spices you like, and bake in the oven until they're cooked through. Serve with some roasted vegetables or a side salad for a well-rounded meal.


Ingredients:

  • 4 bone-in, skin-on chicken thighs

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon paprika

  • 1/4 teaspoon garlic powder

  • 1 tablespoon olive oil

  • Roasted vegetables or side salad, for serving

Instructions:

  1. Preheat the oven to 400°F.

  2. In a small bowl, mix together the salt, pepper, thyme, paprika, and garlic powder.

  3. Rub the chicken thighs all over with the olive oil, then sprinkle with the spice mixture, making sure to coat both sides.

  4. Place the chicken thighs skin-side up on a baking sheet.

  5. Bake for 30-35 minutes, or until the internal temperature reaches 165°F.

  6. Serve the chicken with roasted vegetables or a side salad.

Now, let's talk about some tips and tricks for making cooking more enjoyable for beginners:

  1. Start with simple recipes - don't overwhelm yourself with complicated dishes right away.

  2. Prep your ingredients ahead of time - this will make the actual cooking process go much smoother.

  4. Don't be afraid to experiment with flavors and ingredients - that's where the real fun comes in!

  5. And most importantly, don't take yourself too seriously - cooking should be fun and enjoyable, even if you make mistakes along the way.
